How does it work?  The most important thing to remember is:

For example, you write a check to Holy Name of Mary for $100 and tell us which stores you will shop at... we give you a Kroger, Food Lion or Wal-Mart gift card worth $100 that you can use to pay for your merchandise at that particular store... or you can get a combination of cards... for example, a $50 card for Food Lion and a $50 card for Wal-Mart (totaling $100).

It's so simple to use.  You've seen the credit/debit/gift card machines at the checkout.  The display on the machine will tell you exactly what to do.  You do not need to sign anything or wait for any change.  The amount of your purchase will be deducted from the $100.  The next time you shop at Food Lion, you use the card again.  Keep using it until you have zero balance on the card.
